Chevoo & FireBoard: An Elevated Cheese Experience
When Gerard and Susan Tuck moved from Australia to California, they were inspired to make a staple from home available to people here in the United States: marinated goat cheese. A much loved ingredient for barbecues, dinner parties, or a simple yet delicious snack, they wanted to create a new and unique range of marinated goat cheeses drawing on the abundant farm lands of Northern California and beyond.
“We are a cheese manufacturer.” says Jason Debrovner, Q.A./Compliance Manager at Chevoo. “The need to be able to store our cheese and ensure that it is maintained within a specific range and at optimal temperatures is extremely important to us for food safety and quality assurance purposes.”
Founded in 2015, the name Chevoo (pronounced “sheh-VOO”) is the combination of their two primary ingredients: goat cheese (chèvre) and extra virgin olive oil (EVOO). Based in Sonoma County, California, Chevoo hand-blends goat cheese with spices, herbs, chilis, and pollens and then pairs them with extra virgin olive oil that has been infused with crushed botanicals for eight weeks. The result is an array of gluten-free, vegetarian products that can be enjoyed in a variety of ways.
According to Mr. Debrovner, FireBoard monitoring provides ease of mind at their facility. “With features such as alarm settings that notify us when the temperatures are outside of range and graphic data logging for multiple temperature probes in the various rooms, FireBoard is a perfect way for us to collect data.”
“We can monitor our plant and download our collected information for regulatory compliance as needed,” says Debrovner. He recalled a time when a freezer motor went out. “I was alerted by FireBoard of the increase in temperature in that room,” he said. “Without any real time information being sent, it could have easily been missed, compromising our product.” The real time data reporting and alerts provided by FireBoard are an essential part of keeping a food-based business up to date on what’s happening at their facilities.
